1. " New Generation" of Stevia-Glucosylstevioside

Glucosylstevioside (GSG) is a food additive, also known as enzyme modified stevioside, which is obtained and extracted from stevioside by enzymatic glucosylation, evaporation, concentration and spray drying. Glucosylstevioside significantly improves the bad taste of ordinary stevioside, which is more similar to sucrose in sweetness and has better solubility, making it more convenient to add and use in various foods and beverages.


2. GSGPopular Direction of Research and Application

As early as hundreds of years ago, stevia was used as an herb and sugar substitute in South America. Now stevia is also widely used in the production of food, beverage and flavoring in Asia, North America, South America and European Union countries.However, stevioside and Reb A(Reb A), which contain the most content of stevioside, have a certain post-bitter taste, which will affect the flavor of stevioside. Using enzyme modification technology to remove the bitter taste of stevioside has become the mainstream direction of research and development of major stevioside manufacturers.

Through searching the patents related to stevia glycoside, it was found that except for the extraction and separation process of stevia, enzyme modification was a hot research direction,mainly concentrated in China, the United States, Japan and South Korea[1]. Japan is the first country to use enzymatic stevia glycoside technology, which has been used for more than 30 years and is mainly used in various sauces, sake and other products.South Korea is a big country in the use of stevia, and it is widely used in pickled foods and beverages. It has a special preference for enzymic modified stevia glycoside,GSG has the largest market share in South Korea from a global perspective. As the largest natural sweetener market, the market share of

GSG is also increasing rapidly in the United States.Although China is a big stevia

producer, the practical application of stevia glycoside was a late start, GSG was approved in 2016, which is an emerging market.



3GSG: Superior, More In Line with ConsumersNeed

After enzyme modification, GSG products have better characteristics.It is embodied in the following aspects: first, the bitter aftertaste of traditional stevia glycoside is removed while maintaining fresh and sweet taste, and the taste characteristics are closer to sucrose;Second, the original flavor, especially the fruit flavor, can be maintained or enhanced while reducing the sugar content of the product;Third, GSG can be used as food spice in food additives in China, and can be applied to all kinds of foods except GB2760-2014 Table B.1, there is no limit on the amount of

use, and a clean label scheme can be provided.Fourth, solubility is significantly improved, good stability, more convenient to use in beverage and other industries.


4Conclusion

With the popularity of the concepts of sugar-reduced and natural ingredients, consumers have a great demand for "natural and clean" ingredients. In the past few years, more and more manufacturers have targeted consumer demand for products with more natural, sugar-reduced, simple ingredients. As a sweetener with a clean label, GSG can bring healthier options for food and beverage companies.
